As shown in the figure, the water loss increased almost linearly with time. It is also found that the water loss varied according to the change of relative humidity. From this figure, we found that the water loss of fruits can be successfully controlled by relative humidity. Since the rapid water loss induces severe damages in quality, it is important to suppress the water loss by controlling the relative humidity.
